Γευστικά Χαρακτηριστικά

Χρώμα λαμπερό αχυροκίτρινο με πράσινες ανταύγες. Στην μύτη λευκά ώριμα φρούτα (βερίκοκο, ροδάκινο),  ορυκτές και βοτανικές νότες. Στο στόμα ευχάριστο και νόστιμο, με πλήρες σώμα και όμορφη οξύτητα.  Μακρά και αρωματική επίγευση.

Οινοποίηση

Albarino 100%. Διαβροχή πριν τη ζύμωση σε πρέσα. Ζύμωση σε ανοξείδωτες δεξαμενές σε ελεγχόμενη θερμοκρασία.

Ωρίμαση

Παραμονή στις λεπτές οινολάσπες για 5 μήνες με  batonnage (ανάδευση των οινολασπών) και για άλλους 4 μήνες στην φιάλη
Παλαίωση στην φιάλη για 4-7 χρόνια.

The very young and faintly reductive 2021 Albariño is only 12.5% alcohol (the 2020 is 13.5%). It’s austere, sharp and vibrant, and the back label specifies one to three years, which to me is not its drinking window but the time you should wait before pulling the cork… It’s quite shy and austere, like sea breeze and spring water. It should develop further complexity with age. This has to be one of the most elegant and ethereal vintages for this wine.

The winery’s entry-level wine. Pre-fermentation maceration in press. Fermentation in stainless-steel tanks at controlled temperature and minimum ageing of 5 months on its own lees, with a further 4 months in bottle before release. 200,000 bottles produced. Tasted blind. Very mineral, fluid and precise. Pleasant and deep. Is this Pazo de Señorans better than its superior cuvées? No, but I couldn’t say it is inferior, either. Great quality and cellar work. Tasty, complete, pleasant. GV (FC)
