Γευστικά Χαρακτηριστικά

Ανοικτό διαυγές, ρουμπινί χρώμα. Στην μύτη αισθησιακά αρώματα τριαντάφυλλου, παιώνιας και λουλουδιών που συνδυάζονται με μικρά φρούτα, μικρές σταφίδες και κεράσι. Στο στόμα, ανάλαφρo, φρέσκο, αιθέριο, καθάριο, φρουτώδες, με πλούσιες τανίνες που τυλίγονται γύρω από έναν πυρήνα μαύρου κερασιού, δαμάσκηνου, γαρίφαλου, νέου δέρματος και γλυκόριζας με πολύ μακρά επίγευση.

Οινοποίηση

Nebbiolo 100%. Από τον θρυλικό αμπελώνα Cannubi και στην περιοχή Valleta στο κέντρο της περιοχής του Barolo, μεγέθους 7 στρεμμάτων, με μέγιστο υψόμετρο 280 μέτρα σε φτωχά εδάφη από αργιλλοασβεστολιθικές μάργες σε μια διαφορετική, εξαιρετικά αμμώδη μορφή («di Sant’Agata Fossili»). Χειρονακτικός τρύγος, αποβοστρήχωση, μεταφορά με βαρύτητα σε ανοιχτές γαλλικές δρύινες δεξαμενές όπου γίνεται η αλκοολική ζύμωση με διαβροχή, με έλεγχο θερμοκρασίας και καθημερινή λεπτή άντληση, (pumping over) μαζί με σπάσιμο και ανακύκλωση του καπέλου (punching down ή pigéage στα γαλλικά).

Ωρίμαση

Ακολουθεί μηλογαλακτική ζύμωση σε δρύινα βαρέλια Slavonian και Allier των 35-50 εκατολίτρων και παραμονή  για περίπου 3 χρόνια. Εμφιάλωση χωρίς φιλτράρισμα. Παραμονή στην φιάλη για τουλάχιστον 9 μήνες.

Mπορεί να παλαιώσει για 15-20 χρόνια.

This lean-bodied Barolo is all about grace, detail and pinpoint aromas that cede to smooth ripeness and fine texture. The Cannubi offers an almost weightless style with integrated oak, cedar, camphor ash and crushed stone. Some 4,000 bottles of this quintessentially pretty wine were made. 97 points Audrey Frick (JebDunnuck.com): “Jeweled ruby in color, the 2020 Barolo Cannubi is very attractive on the nose, revealing aromas of raspberry liqueur, pink peppercorn, fresh roses, and toasted anise. Medium-bodied, it’s approachable and fresh, with a rounded midpalate and a weightless feel while having good concentration. Plush tannins float through the finish, as does its long-lasting fruit perfume. This is one of my favorite wines from Cannubi in this vintage and tasted over several days it continued to over-deliver. Drink 2024-2040. (May 2024)”

Relative to the Monvigliero especially, it benefits from having spent ten more months in bottle. The 2020 shows the lighter style of the year, but has gorgeous textural depth to fill out its layers.
